Healthy Red Velvet Pancakes!

I don’t know about you but I love a good pancake breakfast on Saturday morning. I often find that I make them Saturdays because I have time to dilly around in the kitchen a little bit more then on any other day of the week. I’m able to take my time and really make those pancakes delicious and flavourful depending on my mood! These healthy “Red Velvet” pancakes are a sneaky way to add veggies into your pancake breakfast and are child tested! My 3 year old loved them!

You’ll need:

  • Vitamix (or blender)
  • 2 eggs
  • 1 banana
  • Half a zucchini
  • A small beet or half a medium one
  • Dash of cinnamon
  • ½ cup oats or oat flour
  • Non-dairy milk (optional)
  • Coconut oil for frying

Instructions:

Start by grating your beets and zucchini. Each can be up to your taste however I did about ¼ cup zucchini and about 2 tbsp beets. Throw those in the blender, add your banana, eggs, oats and cinnamon and blend them all together. If the batter is not thick enough add 1 tbsp of milk at a time to loosen up.

              

Once you have your batter, add the coconut oil to a frying pan, allow it to melt and pour the batter into medium size patties, wait for those bubbles and flip! Makes about 3 medium pancakes, enjoy!
