Hazelnut Cranberry Bark

If it has hazelnuts in it, count me in.

Let me tell you about a serious problem I have… I’m addicted to chocolate. No joke, I absolutely love chocolate, and I’ll be honest, I eat it everyday. Dark chocolate that is. I don’t know about you, but after a meal I get an urge for something sweet. Throughout the day I tend to say no to sweets and sugar, however in the evening I just can’t help myself. This is why I always keep dark chocolate on hand. This Hazelnut Cranberry Bark is the perfect sweet treat to satisfy that evening craving for me.

Side note* When it comes to giving into sugar cravings, I always recommend going for the dark chocolate. Dark chocolate is actually full of antioxidants and can help with cognitive function. It’s considered a healthy treat for you, in moderation. I try and stick to 70% dark or higher.

What you’ll need:

  • 2 bags of dark chocolate chips (I used Enjoy life dark chocolate 69%, soy, milk, nut free)
  • 2 cups chopped or broken up hazelnuts
  • 1 cup dried cranberries
  • Himalayan pink sea salt to taste

Directions:

Heat up about an inch or 2 of water in a pot on the stove. Once boiling, put heat proof bowl on top of pot, add chocolate chips. Stir chocolate chips until fully melted. Once melted, add most of hazelnuts (keep about a hand full), all of the cranberries and the sea salt and mix. Get a cookie sheet lined with wax or parchment paper. Pour the mixture onto the paper lined sheet and spread out evenly with a spoon. Sprinkle the rest of the hazelnuts on top, you can add more sea salt if you would like too. Place bark in the freezer for half an hour. Once totally hard, break up chocolate into pieces.

Enjoy! Try not to eat it all in one night!
