Let’s be real here. I love chocolate, but something I love more than chocolate, is chocolate and peanut butter.
Growing up peanut butter cups were my jam. Always my first choice when it came to picking something at the candy store. However, now as I’ve grown, and I’m all adulting and stuff, I can’t be throwing back peanut butter cups unfortunately. That is why I’ve created these Almond Butter balls. To replace those childhood peanut butter cup cravings! These Almond Butter balls taste AMAZING. Literally satisfy all my chocolate and peanut cravings in a nice and healthy little treat. The only problem is I have a hard time not eating them all at once!
They are super simple to make. Low sugar, and made with all real ingredients!
What you will need:
- ½ cup almond butter
- ½ cup coconut oil (melted)
- 1 cup plus 2 tbsp almond flour
- ½ tsp sea salt
- 1 tsp cinnamon
- 1 lindt dark chocolate bar (or any brand you like) I used 78% dark
Mix almond butter, coconut oil, almond flour, sea salt, and cinnamon in a bowl. Put the bowl in the fridge for 20 minutes. Once it has cooled enough and is a dough like texture, scoop out and roll into balls. I made 9, but if made smaller could make up to 12. Put on a baking tray with parchment paper, once finished rolling put them in the freezer. While they are in the freezer, melt the dark chocolate on the stove. I use a double boiler, boiling water in the bottom pot, then adding the dark chocolate to the top pot. Once its melted, take the almond butter balls out of the freezer and dip them into the chocolate. Once the chocolate has hardened you and store them in the fridge and enjoy!
