Who runs the world? Pancakes. At least they run my world.
This is a long time coming, this post. Healthy pancakes are literally my ultimate, easy, go-to, best bud, recipe there is out there. I love them, my daughter loves them, you can dress them up, keep em’ classic, AND save them for later.
Seriously though. If you follow me on Instagram (if you don’t, do now!) you’ll know that I make pancakes almost every weekend. I can’t help it. They are perfection in my eyes. Also Grace is always up for them, and they are healthy. Yup, you heard me, HEALTHY.
So, let’s get to the good stuff, I won’t keep you waiting any longer.
What You’ll Need:
- 1 Banana
- 1 egg
- 1 cup of rolled oats
- 1/2 tsp baking soda
- 1 tsp cinnamon
- Splash of coconut milk (or any kind of milk)
What You’ll Need to do:
Put everything in a blender. Blend for 1 minute, or until smooth. Cook on medium-high heat. I use coconut oil on the pan, to prevent sticking. And pour your pancake mix onto pan, cook for 2 mins on each side (judge by the bubbles rising in pancakes as when it’s time to flip). Eat every last one of those babies and don’t feel any sort of remorse. Also don’t forget to add your favourite toppings!
Now if you’re not like me, and can’t finish them all in one sitting. Pop them in the fridge or freezer, and save for later! (I like to put them in the toaster when I go back to them, for an extra little crisp).
